For this year’s Feast of the Fields, Chef Vivian Brammer will be treating us to delectable desserts inspired by the bounty of Saratoga County. Feast attendees will get to taste her Caramel Apple Cheesecake, which features cinnamon-spice roasted apples, and a graham cracker crumb crust, and her Maple Pot de crème with vanilla crème Chantilly, carrot cake bits, garnished with candied pecans.
Chef Brammer started working in restaurants at an early age and has worked her way up the ranks from dishwasher to her current role as Pastry Chef. As a culinary student at Adirondack Community College, her skills and dedication were recognized by being the first to receive the Cardinal Scholarship. Vivian is also the winner of the Parnassus Culinary Award and the Technology Award in Food Service. She is passionate about giving back to the community and is an avid volunteer with organizations including The American Culinary Federation and Big Brothers and Big Sisters.
