Meet the chefs of Two Birds Marketplace!
Pam Imbesi: Pam has over 20 years of baking experience and is self-taught. As a stay-at-home mom to her three daughters, she taught herself how to make speciality cakes, breads and bagels. She went back to work making cakes at the now closed Cowan & Lobel in Stuyvesant Plaza for four years. Pam then started working at Union College, where she worked for 17 years in their catering department making all scratch breads. From there, she spent two years at Stella Pasta Bar & Bakery in Burnt Hills making all of their scratch breads, flatbreads, pasta and desserts. She joined the Two Birds Marketplace team in February of this year.
Felicia Garrison: Felicia was destined to be a baker. At age 10, she was helping make pizza dough at her mom’s pizza shop, served four years in the US Marine Corps, and has a culinary degree with a concentration in baking. Felicia loves cooking and scratch baking, especially breads, pies and cakes. She joined the Two Birds Marketplace team in February of this year.

Thomas Poultry started in 1873 in Northumberland, and today at least 11 of the 17 employees at the farm are direct descendants of Jared Thomas who started the egg operation in 1948 with just 200 laying hens.
